Recipe: Cheese Spinach Dip

1 pkt. Diet Health and Sports brand Creamy Fettuccini mix
¼ c. Spinach, cooked and drained
½-1 tsp. Garlic Powder
¼ tsp. Nutmeg, ground
1 tsp. Lemon Juice

Prepare Fettuccini mix according to package directions, adding an additional minute to the cooking time to assure that the pasta is well cooked. Combine the cooked pasta, spinach and remaining ingredients in a blender. Blend until smooth (if too stiff, add ½ Tb. Water). Place in a serving dish and chill. Serve with sliced vegetables such as celery, cauliflower or mushrooms.

Recipe: Hamburger Stronganoff

1 pkt. Diet Health and Sports brand Creamy Alfredo Mix
8 oz. Water, warm
2 oz. Ground Beef, 95% lean
1 Tb. Cooking Sherry
1 Tb. Onion, chopped
1 Tb. Fat-free Sour Cream

Sauté ground beef and onion until cooked through.  Drain any fat thoroughly and reserve.  Place contents of packet in a medium sized microwave-safe bowl.  Add water and cooking sherry and mix thoroughly.  Microwave on HIGH (100%) for *6 minutes, stirring thoroughly halfway through cooking time.  Add ground beef mixture and mix together.  Return to microwave and cook 2 more minutes or until sauce has thickened.  Sauce will continue to thicken upon standing (1-2 minutes).  Add sour cream and serve immediately.

Recipe: Beefy Mushrooms and Rice

Beefy Mushrooms and Rice

1 pkt. Diet Health and Sports brand Chicken Soup mix
3 oz. Ground Sirloin
¼ tsp. Garlic Powder
½ c. Mushrooms, sliced
2 Tb. Green Onions, diced
½ c. Water, boiling
½ tsp. Parsley
1/3 c. Brown Rice, cooked
No Stick Cooking Spray, as needed

Brown the ground sirloin over medium heat in a skillet coated with no stick cooking spray. Sprinkle the meat with the garlic powder.  Add mushrooms and green onion, continuing to cook until mushrooms are tender.  Combine soup mix and parsley and add boiling water.  Stir soup and rice into beef mixture and simmer for 2 minutes.

Raspberry Cheesecake Pudding

CheesecakePudding1 packet Diet Health and Sports Wise brand Pudding/Shake Mix
1/2 cup cold water
¼ cup low fat Ricotta Cheese
½ cup Sugar Free Cool Whip
¼ tsp. Vanilla Extract
½ c. Frozen Raspberries, thawed (Or your favorite fruit)
Prepare shake mix as directed using ½ cup cold water.  Stir in Ricotta cheese and vanilla.  Fold in Cool Whip and put in pretty glass dessert cups.  Top with the raspberries.
